this is a bit old (from December last year) but hey, i only found out about this now, so i figure it’s worth a mention.
Engadget have posted an article showing how to hack the iPod firmware to change the graphics. you do need Windows to do this, and presumably this would void your warranty, but it’s worth it, right? 
there’s also a video (QuickTime) of the completed iPod firmware hack. of course there’s lots of other images in there that can be changed… if anyone knows of someone who’s gone for the complete personalization - please let me know. 
now here’s also an interesting bit of iPod juiciness - the Juicy Fruit iPod Shuffle. Apple doesn’t recommend eating your iPod Shuffle - so if you’re tempted with that thought already, i guess this won’t help much.
